Pancetta baked salmon with sweet potato chips
- 2 medium skinless salmon fillets
- 6 slices of pancetta
- 1 small sweet potato
- 1 tablespoon coconut oil
Heat oven to 180 degrees. Peel and cut sweet potato into chips. Toss in coconut oil (melt oil on the baking tray in the oven if it’s solid) and place on baking tray. Place in oven and set timer for 20 minutes. Place slightly overlapping slices on pancetta on a flat surface and lay salmon fillet at one end then roll pancetta around the fish. Repeat with other salmon fillet. Lightly oil another baking tray and place salmon fillets on it. Once timer goes off, turn chips over then place fish in oven and cook chips and fish for approximately another 20 minutes.
Serve with mixed green salad.
