3 ingredient peanut butter biscuits
Good for: sugar-free treat, protecting heart and blood vessels
This incredibly simple biscuit recipe uses just 3 ingredients, including the nutritionally impressive peanut butter. Peanuts are a valuable source of mono-unsaturated fats, the same kind that are found in olive oil, plus they contain more antioxidants than most fruits including strawberries and apples. Roasting peanuts only increases their antioxidant activity, so you don’t need to use raw peanut butter.
- 1 cup of peanut butter*
- 1/2 cup xylitol
- 1 egg, beaten
- Optional: 3 tsps cinnamon powder or chopped dark chocolate
Grease a baking tray and preheat oven to 180 degrees. Mix together ingredients then roll into small balls and place onto the baking tray. Press lightly with the back of a fork and then place in oven. Cook for 12 – 15 minutes or until golden brown. Leave to cool on the baking tray for a few minutes before moving to a cooling tray.
*Choose a peanut butter which contains nothing but peanuts. You can use raw or roasted, but roasted does have a nicer flavour.
