Banana and egg might not sound like they would make a good team, but they certainly do! This quick, deliciously sweet, high protein breakfast is perfect after a workout. 

Ingredients:

  • 1 banana
  • 2 eggs
  • 3 drops vanilla essence
  • 1/2 tsp cinnamon
  • coconut oil

Blend banana first until it’s a thick paste, then add eggs, vanilla and cinnamon. Pulse until well mixed. Be careful not too over blend or the eggs will be tough. Add to hot pan with coconut oil, and cook as you would ordinary scrambled eggs.

Serves 1
