
Chicken burgers
Ingredients:
500gm chicken mince
1 onion, finely chopped
2 cloves of chopped garlic
100 gms mushrooms, finely sliced
1 stick of celery, finely sliced
3 eggs, whisked together
Small handful or coriander or flatleaf parsley, finely chopped
Coconut oil
Coconut flour
Sweat the onion and garlic in coconut oil until soft but not brown. Mix rest of ingredients together in a bowl, add onion mix. Wet hands and form into patties. Dip into coconut flour. Fry in coconut oil over medium heat until golden brown and cooked through.
These freeze really well.
