Ingredients:

  • 1 chicken
  • 3 carrots
  • 3 celery sticks and leaves
  • 1 brown onion
  • 3 cloves of garlic
  • 1 zucchini
  • 3 small kale leaves
  • 100 gms shiitake mushrooms
  • 3 bay leaves
  • 1 dessertspoon salt
  • Pepper
  • Coconut oil
  • 8-9 cups of water

Chop onion and slice garlic. Let them rest for 5 minutes to allow the medicinal compounds activate. Wash the chicken and trim off any excess skin. Chop the remaining vegetables. Heat coconut oil in a frying pan and gently sauté the onion and garlic (don’t let them brown). Place the celery and carrots on the bottom of the slow cooker and then top with cooked onion mix. Next add the chicken and then the mushrooms, kale and zucchini. Add water, salt, bay leaves and a generous grind of fresh black pepper. Cook on auto for 8-10 hours. Remove chicken from the cooker. Discard the bones and any excess fat. Flake the chicken flesh and return to pot. Stir and serve.
