Ingredients:

  • 2 medium chicken breasts
  • 1 bunch of broccolini
  • 1 avocado
  • mixed salad greens
  • 1 pomegranate
  • 2 tablespoons crumbled feta*
  • 1 tablespoon coconut oil
  • Optional: toasted walnuts, baby kale leaves, chopped fresh herbs, watercress, fresh berries or ruby grapefruit

Steam broccolini until just cooked then run under cold water to stop it from cooking further. Place salad greens in large bowl and top with broccolini. Heat oil in wok or frying pan. Slice chicken into strips and cook in pan until just tender. Remove from heat and let cool. Scatter salad with pomegranate seeds, sliced avocado and feta. Top with chicken strips. Serve with fresh lemon and olive oil.

* Feta marinated in herbs or garlic is a delicious option for salads. Use a little of the flavoured oil as a dressing with fresh lemon juice.
