100g low fat cream cheese
100g natural bioyoghurt
4-6 sundried tomatoes
Red chilli chopped
Cod fillets
Fresh wholegrain bread crumbs
Salted macadamia nuts – crushed (optional)

Blend together 100gms of low fat cream cheese and natural bioyoghurt with 4-6 sundried tomatoes and chopped chilli to form a paste.
Cover cod fillets with the paste and then dip into fresh wholegrain bread crumbs.
Bake in a medium oven.

This is also delicious with crushed salted macadamia nuts in place of the bread crumbs.
