Coconut goji muesli
Benefits: High fibre, good fats, plenty of antioxidants
- 3 cups of coconut flakes
- ½ cup raw macadamia
- 1/3 cup of goji berries
- ¼ cup of coconut oil
- ½ tsp of sea salt
- 1 heaped tsp raw cacao powder
- 1/3 tsp vanilla concentrate
- 1 tbs of maple syrup, rice malt syrup or liquid xylitol
Roughly chop macadamias and toss in a bowl with coconut flakes. Put the coconut oil and the sweetener of your choice in a saucepan and gentle heat, then add vanilla, cacao powder and sea salt. Pour over nut and coconut mix and stir until coated. Spread on a baking sheet and cook for approximately 40 minutes at 160 degrees, stirring regularly. Once cooked, remove from oven and stir through the goji berries. Cool and eat.
Health hack: mix vanilla protein powder through yoghurt and top with the Coconut Goji Muesli for a high protein breakfast to keep you full for hours.
