Creamy tomato coconut soup
Good for: protecting skin from UV damage, anti-cancer, increasing metabolism, immune system
Tomatoes are often overlooked for more exotic vegetables but they are nutritionally rich in the potent antioxidant lycopene. This carotenoid is great at improving the quality of your skin and protects it from UV damage. Lycopene is also important for men and the prevention of prostate cancer. The combination of coconut oil and chilli increases the calories that you burn so not only does it tastes great, it helps with weight loss too! Garlic is nature’s antibiotic so helps to keep nasty bugs and germs at bay.
- 1/2 brown onion
- 2-3 cloves garlic
- 2 tins chopped tomatoes
- 1 tin coconut milk
- 1 tsp smoked paprika
- 1/4 tsp chilli powder
- 1 tbs coconut oil
- Salt and pepper
Cook finely chopped onion in coconut oil over low heat for about 10 minutes. When the onion is soft and translucent, add the crushed garlic and cook for another minute. Add remaining ingredients to the pan and continue to cook for another 10 minutes. Remove from heat and blend using a immersion blender or food blender. Place blended soup back into saucepan to reheat.
Serve with a dollop of natural yoghurt and chopped fresh coriander.
