Healthy Chocolate cake
Whisk together eggs and oil, then stir through sifted dry ingredients followed by the coconut cream.
Place in greased loaf tin and bake at 180 degrees for 40-45 minutes.
Tips: You do need to sift the dry ingredients as coconut flour can get very lumpy
This is not a runny mix – the coconut flour makes it quite thick. Don’t be tempted to add more liquid because the end result is lovely and moist
Use melted Loving Earth chocolate coconut butter as icing
