Lemon butter baked salmon
This deceptively simple fish meal looks impressive but is really easy to make. Not only is this packed full of protein and omega 3 from the salmon, and antioxidants from the lemon, this method keeps the fish moist and delicious.
- 2 salmon fillets
- 1/2 lemon
- 1 tbs fresh dill
- Baking paper
Tear off a piece of baking paper that is approximately 4x the width of the salmon fillet. Fold the paper in half and then cut it into a heart shape with the fold in the middle. Open up the paper and place the salmon in the middle of one side of the “heart”. Place 2-3 thin slices of butter on the fish, then top with thinly sliced lemon, sprinkle with dill and season with salt and pepper. Starting at the bottom of the “heart”, fold the edge of the paper to form 1 cm crimps, moving around until the whole package is sealed. Repeat with the other fish fillet.
Place both packages of fish on a baking tray and cook in a medium oven for approximately 25 minutes.
