Poached Lemongrass Salmon
1 cup of vegetable stock
1 cup of orange juice
½ cup of white wine
1 clove of crushed garlic
2 tsp of minced lemon grass or one stalk, sliced
2 salmon fillets
Add all ingredients, except fish, to pan. Lightly boil for 5 minutes.
Reduce heat to simmer, add fish and poach for 5 minutes.
Remove lemon grass stalks if used, serve.
