Ingredients:

  • 1 scoop of Better Protein
  • 2 eggs
  • 1 tablespoon of chia seed gel
  • 2 tablespoons coconut cream
  • Few drops of vanilla
  • Sprinkling of cinnamon
  • Berries – fresh or frozen
  • Coconut oil

Mix together all of the ingredients, gently folding in berries last so that they stay whole. Heat oil in frying pan over medium heat. Pour in 1/3 of the mix and cook over low heat until the base is firm and golden, flip and repeat.

If using frozen berries, let them defrost before use.

Serve with Coyo coconut milk yoghurt and fresh berries

Chia seed gel: shake together one part chia to nine parts water. Make in an empty glass jar and store in fridge for up to 10 days.
