Ingredients:

  • 1 bunch of kale
  • 1 lemon
  • 1 handful raw almonds
  • 2 spring onions
  • Crumbled feta
  • 1 avocado
  • 1 handful chopped parsley
  • Olive oil
  • Natural yoghurt
  • Salt and pepper
  • 4 eggs

Remove kale leaves from thick stalks and cut into strips. Place in a bowl and cover with juice of 1 lemon and a pinch of salt. Massage the kale until it becomes darker in colour and tender. Separate into two bowls. Top with parsley, diced avocado, roughly chopped almonds, finely chopped spring onions and scatter with feta cheese. Drizzle with olive oil and season. Top with soft poached eggs and a dollop of natural yoghurt.
