Ricotta pancakes

Ingredients:

  • 1/2 cup of almond meal
  • 1 tsp baking powder
  • 1/3 cup of ricotta
  • 1/2 cup of almond milk
  • 2 eggs
  • 1 small banana
  • Optional: 1 handful blueberries, 1/2 tsp of cinnamon or 1 tsp of raw cacao powder

Mix together eggs, almond milk and ricotta. Stir through almond meal, baking powder and finely sliced/mashed banana until the mix is a thick batter. Heat frying pan and add oil. Pour in enough batter to make small, 10 cm diameter pancakes. Once pancake is bubbling on top, gently turn and cook until golden. Serve with fresh berries and coconut milk yoghurt.
