Tomato and bacon cauliflower pizza
Preheat oven to 200 degrees. Line a baking sheet with parchment paper.
Grate the cauliflower using medium holes. Either microwave dry for 8 minutes or steam until soft. Let cool. Mix cauliflower with the remaining ingredients. Place on tray and shape into thin crust. Pat dry with paper towel.
Cook for 30 minutes or until golden. Turn over and cook bottom for another 15 minutes or until golden. While the pizza base is cooking, cook bacon rashers until crisp and then cut into 1 cm pieces. Cut cherry tomatoes into halves. Remove base from oven and turn oven up. Spread crust with tomato sauce and then top with bacon and tomatoes (and fresh garlic if using). Scatter with cheese and top with torn basil leaves. Place back in oven and cook until the cheese has melted.
