Ingredients:
  • 2 lamb fillets
  • Mixed salad leaves
  • 2 tbs marinated feta*
  • Chopped parsley
  • 1/2 Spanish onion

Rub lamb with olive oil and season with salt and pepper. Heat up pan, and cook lamb for a few minutes one each side until brown on outside but still pink in the centre. remove from pan, cover and let it rest for 3 minutes. Toss together mixed greens, feta, red onion and parsley.  Slice lamb diagonally into strips and serve on topof salad. Drizzle with tzatzuki.

* Feta marinated with fresh herbs and garlic adds more flavour to the dish. Drizzle some oil over the salad in place of salad dressing.
